Pancakes for all occasions

SOLD at almost every Ramadan bazaar, kuih ketayap is a simple traditional Malay sweetmeat that is suitable for all occasions.

Easy to prepare, this delightful pancake is a good option, along with dates, for breaking fast with the family as it is not too heavy and will whet the appetite for more hearty fare.

KUIH KETAYAP

Sweet delight: Kuih ketayap is easy to make and always popular

Ingredients

For the pancake
300g wheat flour
600ml water
1 teaspoon cornflour
1 egg
1 teaspoon salt
1 tablespoon corn oil

A few pandan leaves – crush and pound to extract the juice

For the filling

450ml water
300g grated cocunut
150g gula merah
70g sugar
1 clove (bunga cengkih)
1 teaspoon cornflour, to which a little water has been added

Method

For the filling

Heat the gula merah, sugar and water until the sugars dissolve.

Add the grated coconut and stir.

Add the clove and cornflour and cook the mixture until it is thick and shiny. Leave aside.

For the pancake

Combine flour, cornflour, egg, salt and water, pandan juice and corn oil and mix thoroughly into a thin batter, making sure there are no lumps.

Grease a small pan with a little oil and heat it until it is hot.

Spoon enough batter to cover the base of the pan thinly and cook over a slow fire until the batter is cooked through.

Remove from pan and repeat the process until all the batter is used up.

Place a spoonful of the filling on the non-oily side of a pancake, fold over the ends and roll up the pancake.

Repeat the process with the other pancakes. Serve.
