Salmon curry treat at hotel

THERE are many wonderful things about eating salmon. The fish can be eaten raw, grilled, smoked or baked.

The fish is usually associated with Western cooking and hardly used in a curry.

At the Eastin Hotel’s Swez Brasserie, the salmon curry is one of the favourite items during this year’s buka puasa promotion.

The hotel’s executive chef, Jean Marc Veron, has come up with a local cooking style. Thus the creation of several dishes using the fish.

There are salmon fish head curry, ikan bakar salmon and of course the salmon curry, all using Norwegian Salmon.

“I want to do something different this year for our customers during buka puasa.

“And so far the response has been good and they like it,” said the French chef.

Many people prefer salmon than other fish for several reasons. One is because the fish does not have the unpleasant “fishy” smell.

The fish is also easy to cook, even with minimal seasoning and will always come out tasty. But most important of all is the nutrients it provides.

“Salmon is known for its high level of omega-3 fatty acids - the good fats.

“It also contains a lot of other vitamins,” he said.

However, he said one of the problems with salmon was that it flaked easily.

“If handled roughly, it will break into pieces. We put the fish last, just before we take the dish off the fire to prevent it from breaking into pieces.

“The best is to grill the fish on a hot plate first,” he said.

In addition to salmon, the buffet line also features several other fish dishes.

Those who prefer to have meat, fret not as there are plenty of dishes with chicken, lamb and beef available.

“Our grilled whole lamb comes with different seasoning every day so that the customers can have more variety,” said Chef Veron.

This year, the hotel is offering six menus to be rotated daily with a wide selection of dishes ranging from traditional kampung style, Middle Eastern as well as French, Mediterranean, Japanese and local favourites.

For desserts, there is a selection of Malay kuih, local fruits as well as cakes and cookies.

The buka puasa buffet is priced at RM88++ for adults and RM48++ for children aged between four and 12.
