FOR the past five years, one dish has drawn crowds to the Dynasty Hotel, KL like bees to honey. It is no different this year.
The Udang Galah Special (Sambal Udang Galah), featuring large prawns cooked sambal style, is a favourite among regular guests.
“Once we tried changing the menu and introduced another prawn recipe using smaller prawns, but many of the guests were unhappy,” executive sous chef Baskaran Nayar said.
Baskaran and his team have come up with the Selera Kampung Ramadhan buffet for diners who want authentic dishes from yesteryear.
Another dish which never fails to capture diners’ attention is the Spicy Venison Rendang (Rendang Pedas Rusa).
According to senior sous chef Rizuwan Ahmad, venison has been substituted for beef as the former is more tender.
“Venison is definitely more tender and easier to eat, so it is suitable for diners of all ages,” he said.
The buffet has six menus rotation nightly, but the Udang Galah Special is available every night.
With more than 60 dishes, the buffet offers something for every one and there are live cooking stations where guests can have freshly-made dishes.
The spread includes Kerabu Pucuk Paku, Sup Ekor Lembu, Paru Goreng Berlada, Ayam Pongteh, Kari Rusuk Kambing, Gulai Ikan Tenggiri Emas and Rendang Daging Minangkabau.
“We also have Bubur Lambuk, which is famous in the month of Ramadan. It is prepared according to a home-cooked recipe obtained from the mother of one of our chefs,” added Rizuwan.
He added that most of the dishes were recipes handed down the generations and the only difference was that they were no longer cooked over a wood fire.
The live cooking stations offer a variety of dishes, like Mee Rebus, Pasembor, Fried Chicken, fish, freshly fried karipap, and Murtabak.
There are also the roasted whole lamb, quail eggs, chicken rice and a variety of starters.
Baskaran recommends his personal favourites like the chicken curry, which is hot and spicy.
There are desserts galore, beginning with the wide array of Malay and Nyonya kuih and a combination of hot and cold desserts.
“We have Sago Gula Melaka, Pengat Pisang, Banana Mousse, Tapai Ubi, Savarin with fruits, apple crumble and ice kacang,” Baskaran added.
Dynasty also serves a selection of hot and cold drinks like Soyabean, Sugarcane, Lemon Tea, Air Selasih, Cincau, Bandung and Teh Tarik.
Diners are entertained with live music as they tuck in for buka puasa.
The promotion is available from 7pm to 10pm nightly until Sept 19 at the Ballroom or at the Aseana Coffee House.
The buffet is priced at RM58++ per person and RM29++ for children below 12 years old.
